Inspired by Madbaker.
Take one zucchini, medium marrow size, given to you by Maria.
Contemplate it.
Read your Julia and Jacques book on French cooking. Decide you need more wine. Give up on the presentation.
Take a big pot, put some olive oil in it. Heat on stove.
Chop up a yellow onion; (from the farmer's market, fresh, organic); throw in.
Mash up two cloves of garlic, throw in.
Take about 6 or 7 tomatoes (organic, farmer's market, fresh), chop into hunks, remove stems, throw in.
(hunks are about 1/2 to 1 inch pieces.
Hunk up the zucchini, throw in.
Hunk up about 4 medium eggplants, throw in.
Add guesstimate Herbes De Provence (oregano, bay leave, basil, thyme.) Remember you don't have any Basil, so don't add it.
Cook until everything is either translucent or mushy. Top with parmeson cheese, even if you can't spell it.
Served with chickenwithherbs and angelhair pasta and a green salad with flowers.
I love the farmers market!
