Speed salsa: total time, 20 minutes.

Bad ergonomics. Put it all on one surface so no dancing.
baggo tomatos (4 lb roma)
2 peppers (green yellow bells)
3 jalapenos
head young garlic
snip cilantro
1/2 large sweet onion (walla walla. Woo)
salt and pepper

seed and stem jalapenos, mince, add garlic and keep mincing. Seed and stem peppers, chop. Mince cilantro. (As you do each ingredient, throw in mixing bowl.) Stem and seed tomatoes, puree roughly. chop 1/2 onion. Add salt and pepper. Mix.

Cut thumb on knife, oops, pepperjuice! Trying a different mix of ingredients, more fire less pepper, less cilantro. We'll see. I think I can get this below 10 minutes if I can be speedier with tomatoes, and group the gear more logically around the sink.

EDIT: Too sweet, sweet onion and sweet garlic too much. Not enough bite, little bit of afterfire. Go to 4 jalas, 4 peppers, regular garlic, two snips cilantro. Think I'll try again tonight.

EDIT2: Half the tomatos, twice the cilantro, half a lime, 3 jalas and a Habanero. Bite and burn. Added corn to the first one, it'll be a sweet salsa. The rest of the ingredients are cooking down to become pasta sauce, yum!
